These are some tried and true recipes from my childhood, being raised vegetarian. I haven't crunched the numbers on them for my JC friends, but they have to be healthier than red meat! My meat-loving hubby like both of these, although he prefers the sweet and sour sauce to the sour cream/soup sauce. We've taken them to parties and fooled everyone. They have a wonderful nutty flavor.
Sweet and Sour Meatballs
3 eggs
1 c oats
1/3 c cottage cheese
1 c soda crackers, crushed
1/3 c pecans, chopped fine
2 T soy sauce
1/2 large onion, chopped fine
1/2 t sage
1/2 t salt
Roll into small balls and bake at 375 for 10-15 minutes (until light brown)
Sauce:
16 oz jellied cranberry sauce
2/3 c Hunts chili sauce (half a bottle)
2 T Worcestershire sauce
1 T lemon juice
Cottage Cheese Balls
2 eggs
1 c soda crackers, crushed
1 onion, minced
1 c oats (regular)
1 c cottage cheese (small curd)
1/2 t chicken seasoning
1/2 t salt
1/2 t sage
2T oil (could be omitted)
Roll balls into size of walnuts. Cover with mushroom soup / sour cream gravy with extra mushrooms. Bake at 325 for 45 minutes. Freezes well.
