Salsa Salad

This is my new workday lunch salad...

two pints cherry tomatoes, halved (splurge on the very best vine-ripened kind!)
three red, orange or yellow bell peppers (whatever is fresh and on sale)
diced jicama
diced red onion
fresh cilantro
--if you're not trying to make it totally "free" on JC...
two ears of fresh white corn on the cob, uncooked
salt and pepper to taste
juice of 1-2 fresh limes

Measurements are not precise because I don't measure. Just wing it! You can't hurt it! It's just a salad :)

AWESOME!! No fat!

That sounds really yummy! I need to try jimaca!

I also like using cabbage (like coleslaw sliced) instead of lettuce for a twist.

Hey I tried the salad. I'm not too crazy abou the jicama - but I don't like pears.

You would like the tex-mex salad from the Volumentrics cookbooks.
